Director of Operations
Nathan Ayres is the Director of Operations at Grace Winery, where he leads the continued evolution of the historic estate into one of the region’s most distinctive luxury hospitality destinations. With nearly two decades of experience in luxury and lifestyle hospitality, Nathan brings a thoughtful blend of strategic vision, operational excellence, and heart-led leadership to the Grace Winery experience.
Since joining Grace Winery, Nathan has helped usher the property into a new era—elevating culinary and events programming, refining service standards, and strengthening brand storytelling, all while honoring the estate’s heritage and character.
Previously, Nathan served as Vice President of Operations for Sage Restaurant Concepts, overseeing the company’s East Coast portfolio of restaurants and hotel dining experiences. Earlier in his career, he spent nearly a decade with Four Seasons Resorts, holding leadership roles at Four Seasons Resort Maui, Four Seasons Whistler, and Four Seasons Hotel Philadelphia.
Nathan is a graduate of Penn State University’s School of Hospitality Management and holds a degree in Communications from Juniata College. His leadership and innovation have been recognized with multiple industry honors, including the Penn State School of Hospitality Management Alumni Industry Achievement Award, Hospitality Innovator of the Year and Rookie GM of the Year with Sage Restaurant Concepts, and the Outstanding Overall Food & Beverage Performance Award from Host Hotels & Resorts.
